Veggie Tacos

INGREDIENTS:

  • 6-8 large leaves of romaine lettuce
  • 2 tablespoons coconut oil (unrefined)
  • 1 package cauliflower rice
  • 1 kilogram organic mushrooms (cut in cubes)
  • 1/2 cup shelled pecans
  • 1/2 organic red onion, chopped
  • 2 organic green bell peppers
  • 1 teaspoon paprika
  • 1 teaspoon red chili flakes
  • 1 teaspoon oregano
  • 1 teaspoon pink Himalayan salt
  • 2 tablespoons liquid smoke (no sodium)
  • 1 teaspoon pepper
  • 1 teaspoon cumin
  • 1 teaspoon basil
  • 1 teaspoon garlic powder
  • 1 lime
  • 2 organic avocados (sliced)
  • 1/4 cup organic salsa

DIRECTIONS:

  1. In a skillet, heat coconut oil. Add cauliflower & water. Cook until it starts to soften (not fully cooked).
  2. Add mushrooms and ground pecans. Season veggies with paprika, red chili flakes, oregano, salt, liquid smoke, pepper, cumin, basil, garlic powder, juice from lime and ¼ red onion. Once everything is added, mix for a few minutes and remove skillet from heat.
  3. In another pan, add ¼ cup of water & coconut oil, once water starts to simmer add peppers & remaining onions. Cook until they begin to soften.
  4. Scoop veggie mix into lettuce leaf and top with salsa, peppers, onions and 2 slices of avocado.
  5. Plate and enjoy!!
