Vegetable Pad Thai
INGREDIENTS:
- 1 large organic sweet potato
- 2 organic zucchini
- 2 tbs Coconut oil
- 1/4 cup of raw cashews
- 2 shallots diced
- 1 tsp minced garlic
- 1 Tbs Thai sauce
- 1 Tbs Roasted Red Chili Paste
DIRECTIONS:
- Peel skin off sweet potato and zucchini. Use peeler to make “noodlelike” strips out of sweet potato and zucchini. Set aside.
- Heat oil, add shallots and garlic until slightly brown.
- Toss in cashews and chili paste. Toss until coated.
- Add zucchini, sweet potato and Thai sauce and toss until well coated.
