Vegetable Pad Thai

INGREDIENTS:

  • 1 large organic sweet potato
  • 2 organic zucchini
  • 2 tbs Coconut oil
  • 1/4 cup of raw cashews
  • 2 shallots diced
  • 1 tsp minced garlic
  • 1 Tbs Thai sauce
  • 1 Tbs Roasted Red Chili Paste

DIRECTIONS:

  1. Peel skin off sweet potato and zucchini. Use peeler to make “noodlelike” strips out of sweet potato and zucchini. Set aside.
  2. Heat oil, add shallots and garlic until slightly brown.
  3. Toss in cashews and chili paste. Toss until coated.
  4. Add zucchini, sweet potato and Thai sauce and toss until well coated.
