Steak Salad With Garlic-Herb Dressing
Steak Ingredients:
- 2 sirloin steaks
- 2 tsp coconut or olive oil
- juice of 1 lemon
- Himalayan sea salt and freshly ground black pepper to taste
Salad Ingredients:
- 10-15 spears fresh asparagus
- 3 cups baby spinach
- 1 avocado (sliced)
- ½ cup cherry tomatoes (halved)
Garlic-Herb Dressing Ingredients:
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 garlic clove (crushed)
- 1 tsp fresh thyme leaves
- 1 tsp fresh parsley (chopped)
- Himalayan sea salt and freshly ground black pepper to taste
Directions:
- Season the steak with oil, lemon juice, salt and pepper.
- Grill the steak in a hot griddle pan until cooked to your preference, about 5 7 minutes each side.
- When the steak is cooked, remove from the pan and allow to rest for 5-10 minutes.
- Grill the asparagus in a hot pan until just cooked.
- Slice the steak and place on a bed of baby spinach leaves.
- Add the grilled asparagus, avocado and cherry tomatoes.
- Combine all the ingredients for the garlic-herb dressing and mix well.
- Pour the dressing over the salad and serve!
