Raw Cheesecake
INGREDIENTS:
- 1.5 cups raw cashews
- 1.5 cups raw almonds
- 1 cup medjool dates
- 1/2 teaspoon kosher salt
- 1/2 cup coconut milk
- 1/4 cup organic maple syrup
- 1 tablespoon coconut oil
- 2 tablespoons vanilla extract
- 2 tablespoons lemon juice
- Fresh berries (optional)
- Coconut flakes (optional)
DIRECTIONS:
- Soak raw cashews in water for 6 hours or overnight
- In a food processor, combine almonds, dates and salt
- Add mixture to pie pan and hand mold mixture into a crust (about ½ inch thick). Place in freezer.
- Drain raw cashews and add to food processor. Add coconut milk, maple syrup, coconut oil, vanilla extract and lemon juice. Blend until smooth.
- Fill crust with cashew mixture and top with fresh berries and coconut flakes (optional)
- Refrigerate 1 hour before serving and enjoy!
