Pumpkin “Pie”
Pumpkin “Pie”
INGREDIENTS:
Crust:
- 1/4 cup finely ground almonds
- 1 teaspoon grape seed oil
Filling:
- 1 (15 oz) can pumpkin puree
- 2 teaspoons pumpkin pie spice
- 3/4 cup organic pure powdered stevia for baking
- 3 eggs
- 1 cup unsweetened almond milk
DIRECTIONS:
- Lightly grease an 8”x8” baking pan with grape seed oil
- Distribute the ground almonds evenly on the bottom and slightly up the sides of the baking pan
- In a mixing bowl, whisk together the puree, pumpkin pie spice and stevia (adjusting spices and stevia to taste)
- Whisk in eggs and almond milk
- Pour over almonds in baking dish
- Bake at 350 degrees until knife inserted in center comes out clean, about 45-50 minutes
- Chill and serve!!
This recipe makes 6 servings. This equates to having 1 serving of vegetable, 1 ounce of protein and 1 essential fatty acid!!
