Oven Baked French Onion Chicken
Ingredients:
- 2-4 chicken breasts (skinless and boneless)
- 2-3 onions (sliced)
- 3-4 garlic cloves (minced)
- 1 tbsp fresh thyme (minced)
- 1 ½ cup beef stock (NO sugar added)
- 1 tsp dried onion
- 1 tsp dried oregano
- ½ tsp paprika (optional)
- Himalayan sea salt and freshly ground black pepper
Directions:
- Preheat oven to 400 F.
- In a bowl combine the dried onion, dried oregano, paprika, and generously season to taste.
- Rub the chicken with the onion-oregano mixture, making sure they are well coated.
- Heat a skillet over medium-high heat and brown the chicken 2-3 minutes per side or until nicely browned.
- Set the chicken aside.
- Add the fresh onion and garlic, cook over medium heat, stirring until soft.
- Add 2 tsp of the stock to the skillet along with the thyme and rosemary; cook until a bit caramelized, 5-6 minutes.
- Bring the chicken back to the pan, toss everything, pour in the remaining stock, and place in the oven.
- Bake until chicken is cooked through, about 15-18 minutes. Adjust seasoning and serve!
