Hoisin Plant-Based ‘Duck’ Pancakes
INGREDIENTS:
- 600g King Oyster mushrooms
- 2 tbsp spicy everything seasoning (Flavor God)
- 1 tbsp coconut oil
- 1 pinch of salt
- Nuco organic coconut wraps
- Hoisin sauce
- spring onions
- 1 cucumber
- sesame seeds
- coriander
DIRECTIONS:
- Preheat oven to 350 degrees F.
- Shred stems of mushrooms with hands into thick pieces and slice
mushroom caps. Place in a medium-sized mixing bowl. - Add the spicy everything seasoning, coconut oil and salt to the
bowl and stir to combine ingredients. - Line a baking sheet with parchment paper and add the
mushrooms to the pan in a single layer. - Roast for 30 minutes and remove from oven.
- Drizzle 1 tbsp of Hoisin sauce across the middle of a Nuco
coconut wrap and smear with back of spoon. - Add the mushroom ‘duck’ on top of the coconut wrap and top
with spring onions and cucumber spears. - Sprinkle sesame seeds and coriander on top, wrap it up and
enjoy!
