Cauliflower & Chickpea Tacos
INGREDIENTS:
For the Cauliflower
- 1 organic cauliflower
- 1 tablespoon avocado oil
- 1 teaspoon ground cumin
- 1 tablespoon paprika
- 1 teaspoon ground turmeric
- 1 teaspoon sea salt
For the Chickpeas:
- 1x 400g organic chickpeas
- 1 tablespoon avocado oil
- 1 teaspoon paprika
- 1 teaspoon sea salt
- 1 teaspoon black mustard seeds
DIRECTIONS:
- Preheat oven to 425 degrees F
- Place chickpeas in a baking tray with coconut oil (or avocado oil) and spices & mix well
- In a separate baking tray, toss the cauliflower in the spices and coconut oil (or avocado oil)
- Place both trays in oven. Remove chickpeas after 25-30 minutes (or until crispy). Remove cauliflower after 35-40 minutes
TO SERVE:
On a coconut wrap add vegan mayo or a vegan ranch dressing, lettuce, cauliflower, chickpeas and drizzle with hot sauce.
