Vegetable Sushi
Ingredients:
- Napa cabbage (boiled)
- Carrots (sliced into strips)
- Kirby pickle (sliced into strips)
- Rice wine vinegar
- Sesame oil
- Sesame seeds
- Lemon juice
- Salt
- Portobello mushrooms
- Pepper
- Turmeric
- Avocado Oil
Directions:
- Add sliced carrots and Kirby pickle to a container and “pickle” by adding
rice wine vinegar, sesame oil, sesame seeds, lemon juice and salt. - Slice up some Portobello mushrooms and add to a bowl with salt, pepper,
paprika, turmeric and avocado oil. - Sautee mushrooms in a pan until cooked through.
- Lay out a piece of boiled cabbage and add the mushrooms and pickled vegetables and roll up in the cabbage.
- Roast in a pan for a few seconds on each side.
- Slice up, top with sesame seeds and enjoy!!
