Plant-Based Paella
INGREDIENTS:
- 2 tbsp extra virgin olive oil
- 4 cloves of garlic
- 1 onion
- 1 Italian red pepper
- 1 Italian green pepper
- 2 Roma tomatoes
- ½ cup fresh green beans
- ½ cup fresh peas
- 1 ¼ cups wild rice
- 4 cups vegetable stock
- 1 tsp saffron threads
- 1 tsp sweet paprika
- Sea salt to taste
- Red pepper flakes to taste
- 12 mushrooms (optional)
DIRECTIONS:
- Heat the oil in a pan over medium heat.
- When the pan is hot, add the garlic, onion, and chopped peppers. Cook until golden brown.
- Add the chopped tomatoes and cook for another 5-10 minutes.
- Add the fresh veggies and cook 5 minutes more.
- Add the rice and cook until it begins to be translucent.
- Pour the vegetable broth (hot).
- Add the saffron threads, paprika, salt, and red pepper flakes.
- Stir the paella until all ingredients are mixed.
- Cover and cook over medium heat for 15-20 minutes or until the rice is cooked.
- Add more vegetable broth if the rice is hard and dry.
- Let stand the paella (covered) for at least 5-10 minutes
