Plant-Based Paella

INGREDIENTS:

  • 2 tbsp extra virgin olive oil
  • 4 cloves of garlic
  • 1 onion
  • 1 Italian red pepper
  • 1 Italian green pepper
  • 2 Roma tomatoes
  • ½ cup fresh green beans
  • ½ cup fresh peas
  • 1 ¼ cups wild rice
  • 4 cups vegetable stock
  • 1 tsp saffron threads
  • 1 tsp sweet paprika
  • Sea salt to taste
  • Red pepper flakes to taste
  • 12 mushrooms (optional)

DIRECTIONS:

  1. Heat the oil in a pan over medium heat.
  2. When the pan is hot, add the garlic, onion, and chopped peppers. Cook until golden brown.
  3. Add the chopped tomatoes and cook for another 5-10 minutes.
  4. Add the fresh veggies and cook 5 minutes more.
  5. Add the rice and cook until it begins to be translucent.
  6. Pour the vegetable broth (hot).
  7. Add the saffron threads, paprika, salt, and red pepper flakes.
  8. Stir the paella until all ingredients are mixed.
  9. Cover and cook over medium heat for 15-20 minutes or until the rice is cooked.
  10. Add more vegetable broth if the rice is hard and dry.
  11. Let stand the paella (covered) for at least 5-10 minutes
