Roasted Sweet Potato Greek Salad

Roasted Sweet Potato Greek Salad

Ingredients:

  • 3 large sweet potatoes
  • olive oil
  • sea salt and freshly ground black pepper to taste
  • parsley to taste
  • cucumber
  • tomatoes
  • onions

For Tzatziki Sauce:

  • 1 cup vegan mayo
  • juice from ½ lemon
  • 1 tbsp red wine vinegar
  • 2 tbsp shredded cucumber
  • 2 cloves garlic (pressed)
  • 1 tsp olive oil
  • 1 pinch of freshly ground black pepper
  • 1 thumb-size amount of fresh dill (chopped)

Directions:

  1. Slice 3 large sweet potatoes. Add to baking sheet with some olive oil, sea
    salt, pepper and parsley and bake for 50-60 minutes flipping halfway
    through.
  2. Chop up some cucumbers, tomatoes, and onions and add them over the
    roasted sweet potatoes.
  3. To serve add veggies, chickpeas, and sauce! (Tzatziki recipe above)
