Roasted Sweet Potato Greek Salad
Ingredients:
- 3 large sweet potatoes
- olive oil
- sea salt and freshly ground black pepper to taste
- parsley to taste
- cucumber
- tomatoes
- onions
For Tzatziki Sauce:
- 1 cup vegan mayo
- juice from ½ lemon
- 1 tbsp red wine vinegar
- 2 tbsp shredded cucumber
- 2 cloves garlic (pressed)
- 1 tsp olive oil
- 1 pinch of freshly ground black pepper
- 1 thumb-size amount of fresh dill (chopped)
Directions:
- Slice 3 large sweet potatoes. Add to baking sheet with some olive oil, sea
salt, pepper and parsley and bake for 50-60 minutes flipping halfway
through. - Chop up some cucumbers, tomatoes, and onions and add them over the
roasted sweet potatoes. - To serve add veggies, chickpeas, and sauce! (Tzatziki recipe above)
